
Stuffed Aubergines
Ingredients
- 8 Aubergines
- 3-4 tomatoes just the juice (not the seeds)
- 700 gr minced beef
- 2 large onios
- garlic
- parsley
- olive oil
Instructions
- Peel the aubergines and fry them in a pan with olive oil.

- After they fried place them to a baking tray.

- Use a small spoon to split the aubergine in half and then use the back of the spoon to make them flat.

- Peel some tomatoes

- Remove the seeds

- Peel the onions and put them in the blender.

- User the Blender machine.

- Add the onions to the pan that you used for the aubergines

- After a few minutes the onions will turn brownish.

- Add the minced beef

- Cook it until it turns brown

- Add parsley and mix

- Add tomato sauce

- Add some salt.

- Stuff the aubergines.

- Place them in a oven tray.

- Add some water.

- Bake until the meat get brown and then switch the oven off. Allow the food to rest inside the oven.
